Gokyo Spring Label Junmaishu [Spring Limited Edition] Iwakuni City/Sakai Sake Brewery

This sake is made from Yamaguchi Prefecture’s Nihonbare sake rice, with the hope that your cherry blossom viewing day will be sunny. It has a gorgeous aroma, a soft mouthfeel that is unique to brewing with soft water, and a well-balanced flavor.

This sake is from the only brewery in Yamaguchi Prefecture that can only be sold at member stores of the Japan Famous Sake Association. The soft aroma and mellow flavor give it a spring-like finish.

Wakamusume Usuhanazakura Junmai Ginjo [Spring limited edition] Yamaguchi City/Shintani Sake Brewery

■ Rice used: 100% Saito no Shizuku
■ Rice polishing ratio: 60%
■ Alcohol content: 15.5%

A gorgeous aroma with just the right amount of acidity and sweetness. It is a sake with a slightly spicy aftertaste that goes beyond just sweetness.

A pure rice ginjo sake made from Yamaguchi Prefecture’s original sake rice “Saito no Shizuku” polished to 60%. Please try this sake that won the Gold Award in the Junmai Ginjo category at the IWC2021.

Goddess’ Spring Poem Junmai Daiginjo [Spring Limited Edition] Hagi City/Sumikawa Brewery

■ Rice polishing ratio: 45%
■ Alcohol content: 15%

A spring-only sake with origami syrup from Sumikawa Sake Brewery, the brewer of “Toyo Bijin.” It’s gorgeous and soft, like spring, with a gentle, slightly cloudy taste, making it the perfect bottle for spring.

It’s slightly cloudy with fluffy origami syrup, and features a sweet fruit aroma with a sour and elegant sweetness. It’s a drink that you should definitely try with spring ingredients.

Choyo Fukumusume, Yamaguchi Sakura yeast, Sakura Sakura, Hagi City/Iwasaki Sake Brewery

■ Rice polishing ratio: 60%
■ Alcohol content: 9%

Brewed with “Yamaguchi Sakura Yeast” and “Saito no Shizuku” sake rice, this sake has a sweet and sour taste with a low alcohol content. Enjoy it like wine.

The Yamaguchi Prefecture Sake Brewers Association, Ube National College of Technology, and Yamaguchi Prefecture Industrial Technology Center have teamed up to brew this Junmai sake with “Yamaguchi Sakura Yeast” found in cherry blossom petals in Yamaguchi Prefecture. The sake has a sweet aroma from the cherry blossom yeast and an alcohol content of 9%, making it very easy to drink.
