“Ise Hikari” originated from two stalks that survived when a typhoon knocked down a section of Koshihikari rice cultivated in the Kanda rice fields of Ise Shrine in 1989. The Yamaguchi Prefectural Agricultural Experiment Station conducted research on it at the request of the Shrine Agency, and it continues to be cultivated in Yamaguchi Prefecture today. Known as divine rice, “Ise Hikari” is tastier than koshihikari, has thick stems that make it less likely to fall over, and is resistant to disease, which is why it is also called “the phantom rice.” It is a pure rice daiginjo that is brewed once a year and has a gentle texture and an addictive lingering flavor of the original rice.

To celebrate the revival, the brewery will begin selling its representative brand, “Toyo Otokoyama.” As it is made from raw sake without adding water, it has a high alcohol content and is a satisfying drink.
[Comment from the person in charge]
There used to be more than 30 sake breweries on the island. But times have changed, Kawamura Sake Brewery is the last remaining one. To support the revival of the brewery, we would like as many guests as possible to enjoy our revival celebration sake.
